I had about half of a can of pumpkin leftover from a recent recipe I made and wanted to have a homemade snack on hand that was not hard boiled eggs. I made a few additions to the original
Paleo Almond Flour Muffins recipe. Here is what I added:
- 2 shredded carrots
- 2 handfuls of spinach
- 1 cup frozen blueberries
- 1/2 cup almonds
They turned out great and seem to satisfy my sweet tooth!
